Warriors of the Sea

These warriors have developed ways of utilizing different kinds of vegetables, herbs and spices, which, when cooked correctly and eaten as appropriate to the climate and the body, provide the principles of eating "food as medicine" or traditional health from the inside out.
Southern Thai people love foods with strong taste-turmeric, long pepper, krill and salt are some of the ingredients that are almost always included in typical southern thai dishes and served with rice or rice flour noodles. A unique feature of southern fare is the "phak noh" or side vegetables that help enhance the flavors, reduce the spiciness and boosts your health. The phak noh are made from the buds or sprouts of plants such as the lead trea, young jackfruit, bael fruit, olive, string bean, cucumber and explants, with the most famous being from the sataw (parkia speciosa).
